-polished black granite, each one selected individually and checked for water cracks
-top and sides polished for easy cleaning, use a clean, dry brush or plain water to clean the stone

To prevent cracking of the stone by thermal shock, the pizza stone should be placed on when you start firing the grill, and it should be allowed to cool down slowly inside the bbq. The stone can also break when dropped.
