The perfect way to grill fish!
Place a lemon wedge, spices, some white wine and butter into the top of the cook stand.
Salt and pepper the inside of the fish and place it on the cook stand.
Grill between 300 and 350 till the back fin can be pulled out easily.
You dont have to touch the fish while grilling and because the skin doesnt touch the grate it stays on and gets crisp.
Your fish wont fall apart and when its done use a spatula to move the holder onto the plate with the fish on it. Pull off the skin and enjoy a perfectly grilled fish.
